I was born on Hainan Island, China and love seafood. To me some simple and great way to cook catch of the day fish is to pan sear, salt and pan sear with little oil and maybe some dry red chili pepper on low fire till the fish is golden brown, or steam the fish with fresh ginger and garlic, garnish with green onion then season with sesame oil and soy sauce before serving. Mmmm, it is simply the best.
With frozen fish however I would add some toppings to the pan seared fish. Here is to share a few toppings that are very much loved by my family.
Basil Pesto
In a cooking pan and on low fire, mix the following together till warm:
Basil pesto,
Finely chopped walnuts or sesame seeds,
Finely chopped Smoked beef sausage or Pepperoni and
Chicken broth (use just enough to keep the mix from drying up or more if you want more sauce).
This one is good with many fishes.
Olive Tapenade
In a cooking pan and on low fire, mix the following together till warm:
Olive Tapenade,
Finely chopped walnuts or sesame seeds,
Finely chopped Smoked beef sausage or Pepperoni and
Chicken broth (use just enough to keep the mix from drying up or more if you want more sauce).
This one is good with many fishes.
Mediterranean
In a cooking pan and on low fire, mix the following together till warm:
Marinated artichoke,
Black olives,
Sun dried tomato,
Grilled red pepper.
I use the canned ones and cut them into smaller pieces. Season with salt if need to. It is best with Tilapia.
Ground Pork
In a cooking pan and on medium fire, heat up a table spoon cooking oil with garlic(sliced fresh ones or minced canned ones) and dry red chili pepper if you want to spice it up, mix in ½ lb ground pork, stir occasionally till almost cooked. Add a few finely chopped green onion, ½ tea spoon salt and ½ tea spoon soy-sauces and stir to blend well for another few minutes.
Good with Tilapia or shrimps.
